Ingredients:
Appetizer: Cauliflower Soup - 1 medium cauliflower
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl coconut milk
- Salt and pepper to taste
- Fresh parsley for garnish
Main Course: Lentil-Bulgur Stew
- 1 dl bulgur
- 2 dl green lentils
- 1 bell pepper
- 1 zucchini
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Dessert: Chocolate Mousse
- 200 g dark chocolate (vegan)
- 1 avocado
- 2 tbsp cocoa powder
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- Berries for garnish
Instructions:
1. Prepare the Appetizer: Peel and chop the onion and garlic. Heat olive oil in a pot and sauté the onions briefly. Add the cauliflower, vegetable broth, and coconut milk. Cook until the cauliflower is soft. Blend the soup and season with salt, pepper, and garnish with parsley.2. Prepare the Main Course: Cook the bulgur and lentils separately according to package instructions. Peel and chop the onion, garlic, bell pepper, and zucchini. Heat olive oil in a pan and add the onions, garlic, and vegetables. Sauté until soft. Stir in the bulgur and lentils along with the seasonings. Let simmer for a moment.
3. Prepare the Dessert: Melt the chocolate using a double boiler. In a blender, combine avocado, cocoa powder, maple syrup, and vanilla extract until smooth. Add the melted chocolate and mix well. Divide into bowls and chill in the refrigerator.
4. Serve: Present the appetizer, main course, and dessert beautifully arranged.
