Ingredients:
- 400 g fresh vegetables (e.g., zucchini, bell pepper, carrot) - 200 g chicken breast
- 150 g rice
- 1 onion
- 2 garlic cloves
- 100 ml white wine
- 400 ml chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., basil or parsley)
Instructions:
1. Peel and chop the onion and garlic. Cut the vegetables and chicken breast into bite-sized pieces. 2. Heat olive oil in a pan and sauté the onion and garlic until soft.
3. Add the chicken breast to the pan and cook until done.
4. Add the vegetables to the pan and sauté for a few minutes.
5. Stir in the rice, ensuring it is well coated with the flavors.
6. Pour in the white wine and let it evaporate.
7. Gradually add the chicken broth, stirring continuously until the rice is cooked and the liquid is absorbed.
8. Season with salt and pepper. Garnish with fresh herbs before serving.
