Ingredients:
- 400 g chicken fillets
- 1 dl strong coffee
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp rosemary
- 200 g cherry tomatoes
- 150 g fresh spinach
- 100 g Parmesan cheese (grated)
Instructions:
1. Marinade: In a bowl, mix the coffee, olive oil, salt, black pepper, and rosemary.
2. Add the chicken fillets to the marinade and let them marinate for about 15 minutes.
3. Heat a skillet over medium heat and cook the marinated chicken fillets for 6-7 minutes on each side until fully cooked.
4. Add the cherry tomatoes to the skillet and cook for a few more minutes until the tomatoes soften.
5. Add the fresh spinach to the skillet and stir until the spinach is slightly wilted.
6. Serve the dish topped with grated Parmesan cheese.
