French Onion Soup

Serving Size: 4 servings
Ingredients:
- 6 large onions
- 50 g butter
- 2 tablespoons olive oil
- 1 liter beef broth (or vegetable broth)
- 100 ml white wine
- 1 bay leaf
- 1 teaspoon sugar
- Salt and black pepper to taste
- 4 slices of baguette
- 200 g grated Gruyère cheese
Instructions:
1. Peel and slice the onions into thin rings.
2. Heat the butter and olive oil in a large pot over medium heat.
3. Add the onions to the pot and sauté gently for about 30 minutes until soft and translucent.
4. Add the sugar and continue cooking for an additional 3-4 hours until the onions are beautifully golden brown and caramelized.
5. Pour in the white wine and let it simmer for about 5 minutes until the alcohol evaporates.
6. Add the beef broth and bay leaf. Bring to a boil, then reduce the heat and let the soup simmer for about 30 minutes.
7. Season with salt and pepper to taste.
8. Toast the baguette slices in the oven until crispy.
9. Serve the soup in bowls, top with a slice of baguette, and sprinkle with cheese. Broil in the oven until the cheese is melted and golden.
