Ingredients:
- 200 g quinoa
- 1 dl green beans
- 1 red bell pepper
- 1 cucumber
- 1 avocado
- 100 g feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the quinoa according to package instructions. Allow it to cool.
2. Blanch the green beans in salted water for about 3-5 minutes until bright green and crisp. Drain and cool.
3. Dice the red bell pepper and cucumber. Halve the avocado, remove the pit, and cube it.
4. In a large bowl, combine the cooled quinoa, green beans, bell pepper, cucumber, and avocado.
5. Crumble the feta cheese into the mixture.
6. Prepare the dressing by mixing the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and gently toss to combine.
7. Garnish with fresh basil and serve immediately.
