Ingredients:
- 1 cup quinoa- 2 cups water
- 2 cups fresh spinach
- 1/2 red onion, chopped
- 1/2 red bell pepper, diced
- 1/2 avocado, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse the quinoa under cold water in a fine mesh strainer.2. Cook the quinoa in a saucepan with water for 15 minutes, or until soft and the liquid is absorbed.
3. Allow the quinoa to cool.
4. In a large bowl, combine the cooled quinoa, spinach, red onion, bell pepper, and avocado.
