Ingredients:
- 1 can of chickpeas (about 400 g)- 1 red onion, finely chopped
- 1 bell pepper, diced
- 1 cucumber, diced
- 2 cups cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Rinse and drain the chickpeas. Place them in a large bowl.2. Add the red onion, bell pepper, cucumber, and cherry tomatoes to the chickpeas.
3. In a separate bowl, mix together the olive oil, balsamic vinegar, smoked paprika, salt, and black pepper to create the dressing.
4. Pour the dressing over the salad and toss thoroughly to combine.
5. Allow the salad to chill in the refrigerator for about 15 minutes before serving.
6. Garnish with fresh parsley before serving.
