Ingredients:
- 1 small spring cabbage - 1 carrot
- 1/2 red onion
- 1/2 cucumber
- 1/4 cup fresh parsley
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- Salt and black pepper to taste
Instructions:
1. Thinly slice the spring cabbage and place it in a large bowl. 2. Grate the carrot and add it to the bowl with the cabbage.
3. Slice the red onion and cucumber, then add them to the salad.
4. Chop the fresh parsley and mix it into the salad.
5. In a separate bowl, whisk together the olive oil, apple cider vinegar, maple syrup, salt, and black pepper.
6. Pour the dressing over the salad and toss well.
7. Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
