Delicious and fluffy blinis that are completely vegan. Perfect winter treat that you can enjoy with various toppings like seaweed caviar and marinated avocados.
Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 2 dl buckwheat flour
- 1 dl wheat flour
- 2 tsp dry yeast
- 2 dl plant milk (e.g., oat milk)
- 1/2 dl water
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp sugar
- 1/2 tsp black pepper
Instructions:
1. In a large bowl, mix buckwheat flour, wheat flour, dry yeast, salt, and sugar.
2. Add plant milk and water to the mixture. Stir well until the batter is smooth.
3. Let the batter rest at room temperature for about 30 minutes.
4. Heat a frying pan over medium heat and add olive oil.
5. Pour about 1/4 cup of batter onto the pan and cook until bubbles form on the surface, about 2-3 minutes.
6. Flip the blini and cook for another 2-3 minutes until golden brown.
7. Repeat until all the batter is used.
8. Serve the blinis warm with your choice of toppings, such as seaweed caviar, pickled beets, oat cream, and marinated avocados.
