Ingredients:
- 300 g spaghetti
- 150 g bacon or pancetta
- 3 eggs
- 100 g parmesan cheese, grated
- 2 garlic cloves, minced
- Salt
- Black pepper
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Heat a skillet over medium heat and add the bacon or pancetta. Cook until crispy.
3. Add the minced garlic to the bacon and sauté for an additional minute.
4. Whisk the eggs and mix in the grated parmesan cheese. Season with salt and black pepper.
5. Once the pasta is cooked, drain it and reserve a little cooking water.
6. Add the hot pasta to the skillet with bacon and garlic. Remove the skillet from the heat.
7. Pour the egg mixture over the pasta and stir quickly to cook the eggs with the residual heat. If needed, add a bit of reserved cooking water to make the sauce creamy.
8. Serve immediately and garnish with fresh parsley.
