Vegan Spinach Croquettes

A delicious vegan snack that is crispy on the outside and soft on the inside. Preparation time is only 30 minutes, serving about 4 people. Preparation Time: 30 minutes

Ingredients:
- 200 g fresh spinach - 1 dl rolled oats
- 1 dl all-purpose flour
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1 dl water
- Breadcrumbs (for coating)
- Oil for frying
Instructions:
1. Heat olive oil in a frying pan and add onion and garlic. Sauté until soft. 2. Add fresh spinach to the pan and cook until wilted, about 3-4 minutes.
3. Transfer the spinach-onion mixture to a bowl and mix in rolled oats, flour, salt, black pepper, smoked paprika, and cayenne pepper.
4. Gradually add water until the mixture is thick enough to shape.
5. Form small balls or flat discs from the mixture and roll them in breadcrumbs.
6. Heat oil in a pan and fry the croquettes until golden brown on both sides, about 4-5 minutes per side.
7. Place the croquettes on paper towels to absorb excess oil.
Serve warm with a dipping sauce!
