Ingredients:

- 1 cup sushi or jasmine rice
- 1 ½ cups water
- 1 avocado
- 1 cucumber
- 1 carrot
- 1 red bell pepper
- 3.5 oz tofu
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp sesame seeds
- Sea salt to taste
- Fresh cilantro (optional)

Instructions:

1. Rinse the rice in cold water until the water runs clear. Cook the rice in 1 ½ cups of water according to package instructions.
2. Slice the avocado, cucumber, carrot, and bell pepper into strips.
3. Dice the tofu and sauté it in sesame oil until golden brown. Add the soy sauce and mix well.
4. Once the rice is cooked, season it with rice vinegar and a pinch of sea salt.
5. Spoon the rice into bowls and top with sautéed tofu, vegetables, and sesame seeds.
6. Garnish with fresh cilantro if desired.
