A delicious and colorful vegan sushi bowl, perfect for a healthy meal. Preparation Time: 30 minutes
Serving Size: 2 servings
Ingredients:
- 1 cup sushi rice - 2 cups water
- 1 tbsp rice vinegar
- 1 tbsp sugar
- 1/2 tsp salt
- 1 avocado, sliced
- 1/2 cucumber, cut into thin strips
- 1/2 carrot, cut into thin strips
- 1/4 red cabbage, cut into thin strips
- 1/2 cup edamame beans, cooked
- 1 tbsp soy sauce
- Tofu, cooked or marinated (optional)
- Sesame seeds for garnish
- Seaweed (optional)
Instructions:
1. Rinse the sushi rice under cold water until the water runs clear. 2. Cook the rice in a pot with the water until soft and all the liquid is absorbed. Let it cool.
3. In a small bowl, mix the rice vinegar, sugar, and salt until the sugar dissolves. Gently fold this mixture into the cooled rice.
4. Place the rice in a serving bowl and top with sliced avocado, cucumber, carrot, red cabbage, edamame, and tofu if using.
5. Drizzle soy sauce over the sushi bowl and garnish with sesame seeds and seaweed if desired.
6. Serve immediately and enjoy!
