Ingredients:
- 1 onion
- 3 garlic cloves
- 8 sun-dried tomatoes, halved
- 2 tablespoons oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 packet (about 160-180 g) vegan "chicken" strips
- 2 ½ dl oat cream
- Salt and black pepper to taste
- 2 handfuls of fresh spinach
- Cooked pasta (raw weight about 350 g)
- Vegan parmesan (e.g., hemp parmesan)
- Chili flakes (optional)
Instructions:
1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
2. Finely chop the onion and garlic. Heat oil in a skillet and sauté the onion and garlic until soft.
3. Add the sun-dried tomatoes, thyme, and oregano to the skillet. Mix well and cook for a few minutes.
4. Add the vegan chicken strips to the skillet and cook until warmed through.
5. Pour in the oat cream and stir. Season with salt and black pepper.
6. Add the fresh spinach and stir until wilted.
7. Drain the cooked pasta and add it to the sauce. Mix well to combine.
8. Serve the pasta topped with vegan parmesan and chili flakes if desired. Enjoy!
