This delicious vegan sausage pasta is a quick and easy weeknight meal that the whole family will enjoy. Preparation takes only 30 minutes and it's a perfect dish for busy days. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g., spaghetti or penne)
- 200 g vegan sausage, sliced
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 can (400 g) crushed tomatoes
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp chili flakes (optional)
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some pasta water.
2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sauté for about 3-4 minutes until softened.
3. Add the vegan sausage and bell pepper to the skillet. Cook for about 5 minutes until the sausage is slightly browned.
4. Stir in the crushed tomatoes, oregano, chili flakes, salt, and pepper. Mix well and let simmer for about 10 minutes.
5. Combine the cooked pasta with the sauce. Add a bit of reserved pasta water if needed for a better consistency.
6. Serve warm, garnished with fresh basil.
