Ingredients:
- 8 corn tortillas
- 1 can black beans (about 400 g), rinsed and drained
- 1 avocado, diced
- 1 small red onion, finely chopped
- 1 bell pepper, diced
- 1 cup corn (fresh or frozen)
- 1 lime, juiced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- Salsa or other sauce for serving (optional)
Instructions:
1. Heat a skillet over medium heat. Add the black beans, bell pepper, red onion, and corn to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
2. Add lime juice, cumin, paprika, salt, and pepper. Mix well and cook for a few more minutes.
3. Warm the corn tortillas separately in a skillet or microwave.
4. Fill each tortilla with the black bean mixture and top with diced avocado. Garnish with fresh cilantro and serve with salsa.
