Ingredients:
- 1.3 cups finely ground buckwheat - 2.1 cups shredded coconut
- 0.4 cup almond flour
- 0.4 cup oil (olive oil works well)
- 1.6 cups coconut sugar
- 1 tbsp + 1 tsp psyllium husk
- 8 tbsp water
- About 1.4 cups orange juice
- 1 tbsp grated orange zest
- 1½ tsp baking powder
- 50 grams grated dark chocolate (optional)
Instructions:
1. In a bowl, combine all the dry ingredients. (It's best to grind the shredded coconut as finely as possible.) 2. In a separate bowl, mix psyllium husk with water, oil, and orange juice, allowing it to sit for at least 10 minutes.
3. Add the grated orange zest to the dry ingredients and mix well.
4. Incorporate the thickened psyllium mixture into the dry ingredients, stirring until a smooth batter forms.
5. This batter is enough for two small cakes or one regular-sized cake.
6. Bake in a preheated oven at 180°C (356°F) for 40-45 minutes.
