These delicious chocolate cupcakes are the perfect alternative for weddings or other celebrations. They are gluten-free and dairy-free, making them suitable for various diets. Preparation Time: 30 minutes
Serving Size: 12 cupcakes
Ingredients:
- 2 dl gluten-free flour blend
- 1 dl cocoa powder
- 1 dl sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 dl vegetable oil
- 1 dl almond milk (or other plant-based milk)
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar
For the Mocha Frosting:
- 1 dl coconut oil (softened)
- 2 dl powdered sugar
- 2 tbsp coffee (cold)
- 1 tsp vanilla extract
Instructions:
1. Preheat the oven to 180°C (350°F) and prepare a muffin tin with paper liners.
2. In a bowl, mix the dry ingredients: gluten-free flour blend, cocoa powder, sugar, baking powder, and salt.
3. Add vegetable oil, almond milk, vanilla extract, and apple cider vinegar to the dry ingredients. Mix until you have a smooth batter.
4. Divide the batter among the muffin tin, filling each cup about 2/3 full.
5. Bake in the oven for 15-20 minutes or until the cupcakes are cooked through. Let them cool.
6. Prepare the mocha frosting by mixing softened coconut oil, powdered sugar, coffee, and vanilla extract. Whip until the mixture is smooth and fluffy.
7. Spread the mocha frosting on the cooled cupcakes and decorate as desired.
