These delicious homemade marshmallows are a perfect holiday treat, and you can shape them beautifully with gingerbread cookie cutters. Preparation Time: 2 hours (including setting time)
Serving Size: About 20 marshmallows
Ingredients:
- 1 cup water
- 1 ½ cups sugar
- ⅓ cup corn syrup
- 1 cup marshmallow powder
- 2 teaspoons vanilla extract
- ⅓ cup powdered sugar
- ⅓ cup cornstarch
Instructions:
1. In a saucepan, combine ⅓ cup of water, sugar, and corn syrup. Heat over medium heat until the sugar completely dissolves.
2. Add the remaining water and bring the mixture to a boil. Let it boil for about 10 minutes.
3. Meanwhile, in a separate bowl, whip the marshmallow powder and vanilla extract until fluffy.
4. Pour the hot sugar mixture over the whipped marshmallow powder and mix well. Continue to stir until the mixture thickens and turns light in color.
5. Pour the mixture into a greased pan and smooth the surface. Allow it to set at room temperature for about 1-2 hours.
6. Once set, dust the top with powdered sugar and cornstarch.
7. Cut the marshmallows into desired shapes using gingerbread cookie cutters and enjoy!
