A delightful and dreamy oatmeal dish that bakes to perfection in the oven. Perfect for breakfast, a snack, or dessert. Enjoy it with yogurt, milk, or even ice cream.

Serving Size: 4-6 servings

Ingredients:

- 500 g pitted, fresh plums
- 1 tbsp coconut sugar or brown sugar
- Cinnamon
- 4 dl rolled oats
- 3 tbsp coconut sugar or brown sugar
- 2 tsp vanilla sugar
- 1 tsp baking powder
- 1 tsp cinnamon (+1 tsp for topping)
- A pinch of cardamom
- 0.5 tsp salt
- 4 dl almond milk
- 2 tbsp melted coconut oil
- 1 large egg
- For topping: 150 g plums, honey, and cinnamon

Instructions:

1. Prepare and chop the plums. Leave some halved, cut others into smaller pieces, and peel some if desired. Arrange 500 g of plums in the bottom and sides of a baking dish, placing the halved and peeled ones at the bottom.
2. Sprinkle 1 tbsp of coconut sugar and a dash of cinnamon over the plums.
3. In a bowl, mix the rolled oats and other ingredients in the order given. Pour the mixture over the plums in the baking dish.
4. Arrange the halved plums on top for decoration. Drizzle with honey and sprinkle a little more cinnamon.
5. Bake in the oven at 200°C (392°F) for about 40 minutes. Allow to cool slightly before serving. You can prepare the oatmeal the night before.
6. Serve with plain yogurt and honey.
