Ingredients:
- 1 ½ cups gluten-free flour
- 1 cup cocoa powder
- 1 cup sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup vegetable oil
- 1 cup plant-based milk (e.g., almond or oat milk)
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar
For the Mocha Frosting:
- 2 cups powdered sugar
- 2 tbsp cocoa powder
- 2 tbsp vegetable oil
- 1 cup plant-based milk
- 1 tsp coffee powder (optional)
Instructions:
1. Preheat the oven to 350°F (175°C) and prepare a muffin tin by lining it with paper liners.
2. In a large bowl, mix the dry ingredients: gluten-free flour, cocoa powder, sugar, baking powder, baking soda, and salt.
3. Add the wet ingredients to the dry mixture: vegetable oil, plant-based milk, vanilla extract, and apple cider vinegar. Mix until a smooth batter forms.
4. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
5. Bake in the oven for about 15-20 minutes or until the cupcakes are cooked through (check with a toothpick).
6. Allow the cupcakes to cool before frosting with mocha frosting.
7. For the mocha frosting, combine all the frosting ingredients in a bowl and whisk until smooth.
8. Spread the mocha frosting on the cooled cupcakes and decorate as desired.
