A delicious and fresh dish combining early cabbage and grilled bratwurst, perfect for the grilling season. This recipe is easy to make in the oven as well.

Serving Size: 4-6 servings

Ingredients:

- 1 small early cabbage
- 2 tablespoons oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tablespoon curry
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup vegetable broth
- 1 cup coconut milk
- Fresh parsley or cilantro for garnish

Instructions:

1. Cut the early cabbage into quarters and remove the core.
2. Heat the oil in a pan over medium heat and add the chopped onion. Sauté the onion for about 3 minutes.
3. Add the crushed garlic and curry, mix well and cook for another minute.
4. Add the cabbage pieces to the pan, season with salt and black pepper. Stir and cook for a few minutes.
5. Pour in the vegetable broth and coconut milk. Allow the mixture to simmer on low heat for about 10-15 minutes, until the cabbage is tender.
6. Serve with grilled bratwurst and sprinkle fresh parsley or cilantro on top.
