Ingredients:
- 2 tablespoons red curry paste
- 400 ml coconut milk
- 300 g chicken strips (or tofu)
- 1 bell pepper (red or yellow)
- 1 carrot
- 100 g mushrooms (e.g., button mushrooms)
- 2 tablespoons fish sauce (or soy sauce)
- 1 tablespoon sugar
- Fresh basil or cilantro for garnish
- Rice for serving
Instructions:
1. Heat a splash of oil in a pan and add the red curry paste. Sauté for a moment until fragrant.
2. Pour in the coconut milk and mix well.
3. Add the chicken strips (or tofu) and let it cook for about 5-7 minutes.
4. Slice the bell pepper, carrot, and mushrooms, then add them to the pan. Cook until the vegetables are tender.
5. Season with fish sauce and sugar. Mix well and let simmer for a few more minutes.
6. Serve the red curry with cooked rice and garnish with fresh herbs.
