Ingredients:

- 400 g tofu
- 2 tablespoons Panang curry paste
- 400 ml coconut milk
- 1 red bell pepper
- 1 green bell pepper
- 1 small zucchini
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 tablespoon oil for frying
- Fresh cilantro for garnish

Instructions:

1. Cut the tofu into cubes and fry in oil in a pan until golden brown.
2. Add the Panang curry paste and mix well.
3. Pour the coconut milk into the pan and stir until the paste dissolves.
4. Add the diced bell peppers and zucchini. Let it simmer on low heat for about 10 minutes.
5. Season with soy sauce and lime juice.
6. Serve the curry garnished with fresh cilantro.
