Description: A rich and creamy Thai curry made with chicken, coconut milk, and aromatic spices. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g chicken breast, diced
- 2 tbsp Panang curry paste
- 1 can (400 ml) coconut milk
- 1 tbsp fish sauce
- 1 tbsp sugar
- 1 red bell pepper, sliced
- 1 handful fresh basil
- Juice of 1 lime
- 2 tbsp oil for frying
Instructions:
1. Cut the chicken breast into bite-sized pieces.
2. Heat oil in a pan and add the chicken. Cook until the chicken is fully cooked.
3. Add the Panang curry paste to the pan and mix well.
4. Pour in the coconut milk and stir. Allow to simmer on low heat.
5. Add the fish sauce and sugar, and mix thoroughly.
6. Slice the red bell pepper and add it to the pan. Cook for a few minutes until tender.
7. Remove the pan from heat and stir in the fresh basil and lime juice.
8. Serve with rice and enjoy your delicious Panang curry!
