A delicious and spicy noodle soup that combines coconut milk, curry paste, and turkey, taking your taste buds on a journey to Northern Thailand! Preparation Time: 30 minutes

Ingredients:
- 400 g ground turkey- 2 tbsp curry paste (e.g., yellow or red)
- 400 ml coconut milk
- 4 dl chicken or vegetable broth
- 200 g noodles (e.g., egg noodles)
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tbsp oil for frying
- 2 tbsp fish sauce
- 1 tbsp sugar (e.g., palm sugar)
- Juice of 1 lime
- Fresh cilantro for garnish
- Chopped green onions for garnish
- Chili slices (optional)
Instructions:
1. Heat the oil in a large pot over medium heat. Add the chopped onion and crushed garlic, sauté until softened.2. Add the ground turkey and cook until browned.
3. Stir in the curry paste and cook for another minute until fragrant.
4. Pour in the coconut milk and broth. Add the fish sauce and sugar. Mix well and bring to a boil.
5. Cook the noodles separately according to package instructions. Drain and then add them to the pot.
6. Add the lime juice and stir. Let the soup simmer for a few more minutes.
7. Serve the soup in bowls and garnish with fresh cilantro, green onions, and chili slices.
