These tasty vegetable patties are a great option for lunch or dinner and can be easily customized to your taste! Preparation Time: 30 minutes

Ingredients:
- 2 cups cooked chickpeas (canned or boiled)
- 1 cup rolled oats
- 1 small onion
- 2 garlic cloves
- 1 carrot (grated)
- 1 cup fresh herbs (e.g. parsley or basil)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika powder
- 1 tbsp olive oil for frying
Instructions:
1. Drain and rinse the chickpeas if using canned. Mash the chickpeas with a fork or in a food processor.
2. Finely chop the onion and garlic. Sauté them in olive oil in a pan until softened.
3. In a bowl, mix the mashed chickpeas, rolled oats, grated carrot, sautéed onions, herbs, salt, black pepper, and paprika. Stir well.
4. Shape the mixture into evenly sized patties.
5. Heat some olive oil in a pan and fry the patties for about 5-7 minutes on each side until they are golden brown.
6. Serve warm with salad or bread.
