A traditional Finnish rice porridge that brings warmth and flavor to the Christmas table. This creamy and soft dish is perfect as a dessert or breakfast during the holiday season.

Serving Size: 6 servings

Ingredients:

- 2 dl rice for porridge
- 1 l milk
- 1/2 tsp salt
- 1/2 dl sugar
- 1 tsp vanilla sugar
- 1 cinnamon stick (optional)
- Almonds for garnish (optional)

Instructions:

1. Rinse the rice in cold water using a sieve.
2. Pour the rice into a large pot and add milk and salt.
3. Heat the mixture over medium heat until it comes to a boil.
4. If using, add the cinnamon stick. Reduce the heat and simmer the porridge on low for about 40-50 minutes, until the rice is soft and the porridge is thick. Stir occasionally to prevent sticking.
5. Remove the cinnamon stick and stir in the sugar and vanilla sugar.
6. Serve the warm rice porridge with additional cinnamon and sugar, and garnish with almonds if desired.
