A delicious no-knead mixed grain bread, perfect for home bakers who want to enjoy fresh bread without much effort. The dough rises for a long time, making it particularly flavorful and moist. Preparation Time: 12-18 hours (rising) + 45-50 minutes baking time
Serving Size: Makes 2 loaves
Ingredients:
- 1 liter of lukewarm water - 3 small pieces of fresh yeast (about the size of a pea)
- 3.5 teaspoons of salt
- 200 ml barley flakes
- 200 ml bread flour
- 200 ml 7-grain flakes
- 300 ml whole wheat flour
- 100 ml coarsely ground wheat flour
- 2 tablespoons olive oil
Additionally, you will need:
- 2 covered pots or other baking dishes
- 2 kitchen towels
- 2 proofing bowls
- Flour for dusting
Instructions:
1. Dissolve the yeast in lukewarm water. 2. Add salt, barley flakes, and 7-grain flakes. Mix well.
3. Gradually add the flours and stir until the dough is smooth. Finally, add the olive oil.
4. Cover the bowl with plastic wrap and let the dough rise at room temperature for 12-18 hours.
5. Generously flour a work surface and turn the risen dough out onto it.
6. Divide the dough into two parts and shape them into loaves by hand.
7. Place kitchen towels in the proofing bowls, dust them with flour, and place the loaves inside to rise for about two hours.
8. Preheat the oven to 230°C (450°F) and place the pots (without lids) in the oven to heat.
9. Turn the risen loaves into the hot pots, cover with lids, and bake for 30 minutes.
10. Remove the lids and bake for an additional 15-20 minutes until the loaves are beautifully golden brown.
