Farinata is a delicious and gluten-free Italian bread made from chickpea flour. This crispy bread pairs perfectly with grilled vegetables or Provolone cheese.

Ingredients:

- 200 g chickpea flour
- 600 ml water
- 4 tbsp olive oil
- 1 tsp salt
- Black pepper to taste
- Fresh herbs (e.g., rosemary or thyme) for garnish

Instructions:

1. In a bowl, mix chickpea flour, salt, and water until smooth. Let the batter rest at room temperature for at least 1-2 hours.
2. Preheat the oven to 220°C (200°C for fan oven).
3. Pour the olive oil onto a baking tray and heat it in the oven for about 10 minutes.
4. Carefully pour the batter into the hot oil and spread it evenly on the tray.
5. Bake in the oven for about 20-25 minutes or until the top is golden brown and crispy.
6. Remove from the oven and let cool slightly before slicing. Serve with grilled vegetables or Provolone cheese.
