A simple and delicious chicken dish inspired by the sun of Italy, featuring Italian herbs, roasted tomatoes, and a nutty gremolata topping. - Preparation Time: Over 60 minutes

Ingredients:
- 4 chicken breast fillets
- 200 g cherry tomatoes
- 2 garlic cloves
- Zest of 1 lemon
- 1 dl fresh parsley (chopped)
- 50 g almond flakes
- 50 g Parmesan cheese (grated)
- 4 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Place the cherry tomatoes on a baking sheet, drizzle with 1 tbsp of olive oil, and season with salt and pepper. Roast in the oven for about 20 minutes until soft and slightly browned.
3. Meanwhile, prepare the gremolata: In a bowl, mix together the lemon zest, chopped parsley, minced garlic, almond flakes, Parmesan cheese, and 3 tbsp of olive oil. Season with salt and pepper.
4. Heat 1 tbsp of olive oil in a skillet. Sear the chicken breast fillets on both sides for about 5-7 minutes until golden brown.
5. Remove the chicken from the skillet and place it on the baking sheet. Spread the gremolata mixture over the chicken.
6. Add the roasted tomatoes around the chicken and return to the oven for an additional 15 minutes, until the chicken is fully cooked.
7. Serve warm, paired with rice or a salad.
