A warming chai-spiced syrup perfect for enhancing hot cider or juice during winter celebrations.
Preparation Time: 2.5 hours
Serving Size: Several servings
Ingredients:
- 300 ml coconut palm sugar
- 400 ml sweet apple cider
- 1 vanilla bean
- 1 cinnamon stick
- 4 star anise
- 1 tsp cardamom
- A pinch of orange peel
- About 2 cm piece of fresh ginger
- Zest of 2 oranges
Instructions:
1. Lightly toast the coconut palm sugar in a saucepan.
2. Add the toasted sugar to the pan along with the vanilla bean, cinnamon stick, star anise, cardamom, orange peel, ginger, and orange zest.
3. Pour in the apple cider and stir well to combine.
4. Simmer the mixture on low heat for about two hours, allowing the flavors to meld.
5. Let the syrup cool, then strain it into a clean container.
6. Store the syrup in the refrigerator, using about 20 ml per mug of cider or juice.
7. Warm the syrup before serving, but do not boil, especially if using cider.
