Ingredients:
- 300 g spaghetti
- 150 g bacon or pancetta
- 3 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt (to taste)
- Black pepper (to taste)
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, heat a frying pan and cook the bacon or pancetta until crispy. Add the minced garlic to the pan and sauté for another minute.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper to taste.
4. Once the pasta is cooked, drain it and reserve a bit of the cooking water. Add the pasta to the bacon mixture in the pan and mix well.
5. Remove the pan from heat and quickly stir in the egg mixture with the pasta. Mix well to ensure the eggs cook gently, creating a creamy sauce. Add reserved cooking water if the mixture is too dry.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
