A delightful autumn dish that combines spicy meat, sweet pumpkin, and aromatic mushrooms. Perfect for both everyday meals and special occasions. Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 500 g beef (e.g., shoulder or meatballs) - 400 g pumpkin (e.g., hokkaido or butternut)
- 200 g fresh mushrooms (e.g., chanterelles or button mushrooms)
- 1 large onion
- 2 garlic cloves
- 2 dl red wine (e.g., Marsala)
- 2 dl beef broth
- 1 tbsp fresh rosemary
- 1 tbsp fresh thyme
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Peel and chop the onion and garlic. Peel and cube the pumpkin. Clean and slice the mushrooms. 2. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté for a few minutes until softened.
3. Add the beef to the pot and brown it on all sides.
4. Add the mushrooms and pumpkin cubes to the pot, mixing well.
5. Pour in the red wine and beef broth. Add rosemary, thyme, salt, and pepper.
6. Allow the stew to simmer over low heat for about 30-40 minutes until the meat is tender and the pumpkin is soft.
7. Serve warm, accompanied by fresh bread or rice.
