A delicious and healthy pasta dish that comes together quickly, perfect for Meatless October. This recipe combines seasonal ingredients and flavors, with kale adding a beautiful color and nutrients to the meal.

Serving Size: 4 servings
Ingredients:
- 250 g pasta (such as spaghetti or penne)
- 150 g fresh kale
- 2 garlic cloves
- 2 tablespoons olive oil
- 100 ml vegetable broth
- 100 ml Parmesan cheese (or vegan alternative)
- Salt and pepper to taste
- Nuts or seeds (such as pine nuts) for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a bit of the cooking water.
2. Chop the kale and garlic.
3. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for about a minute.
4. Add the kale to the skillet and cook until softened, about 3-4 minutes.
5. Pour the vegetable broth into the skillet and bring to a boil. Add the cooked pasta and mix well. If needed, add reserved cooking water to prevent the pasta from drying out.
6. Grate the Parmesan cheese into the skillet and stir until melted. Season with salt and pepper.
7. Serve the pasta warm, garnished with nuts or seeds.
