A quick and delicious noodle dish, perfect for busy weeknights. This recipe is flavored with simple sauce ingredients and vegetables that you likely have on hand. Preparation time: about 20 minutes. Serves: 2.Ingredients:
- 200 g green noodles- 2 tbsp soy sauce
- 1 tbsp oyster sauce (or vegan hoisin sauce)
- 1 tsp grated ginger
- 1 tbsp honey or other sweetener
- 1 tsp sriracha (or to taste)
- 2 tbsp oil for frying
- 1 bell pepper, sliced
- 1 carrot, sliced
- 100 g peas (fresh or frozen)
- 2 green onions, sliced
Instructions:
1. Cook the green noodles according to package instructions. Drain and set aside.2. Heat the oil in a large frying pan or wok over medium heat.
3. Add the bell pepper, carrot, and peas to the pan. Stir-fry for about 5 minutes until the vegetables are tender.
4. Add the cooked noodles to the pan with the vegetables.
5. In a bowl, mix together the soy sauce, oyster sauce, ginger, honey, and sriracha. Pour the sauce over the noodles and vegetables.
6. Toss all the ingredients together well and stir-fry for a few more minutes until everything is heated through.
7. Add the green onions just before serving and toss lightly.
