Ingredients:
- 1 cup cooked or canned chickpeas
- 1/2 cup rolled oats
- 1 small onion (finely chopped)
- 2 garlic cloves (crushed)
- 1/2 cup grated carrot
- 1/2 cup spinach (chopped, fresh or frozen)
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 egg (optional, for binding)
- 2 tbsp olive oil (for frying)
Instructions:
1. Mash the chickpeas in a bowl, leaving some texture.
2. Add the rolled oats, onion, garlic, grated carrot, and spinach. Mix well.
3. Season the mixture with cumin, salt, and black pepper. If using, add the egg.
4. Shape the mixture into patties using your hands.
5. Heat olive oil in a pan over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown.
6. Enjoy the patties with fresh salads or sauces!
