Ingredients:
- 2 dl cooked chickpeas - 1 medium carrot, grated
- 1 small zucchini, grated
- 1 dl finely chopped onion
- 2 garlic cloves, crushed
- 1 dl rolled oats
- 1 tsp paprika powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil for frying
- Fresh parsley or basil, chopped (optional)
Instructions:
1. Mash the chickpeas in a bowl with a fork or blender until smooth. 2. Add the grated carrot, zucchini, onion, garlic, rolled oats, paprika powder, salt, and black pepper to the chickpea mixture. Mix well.
3. Shape the mixture into evenly sized patties.
4. Heat the olive oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown.
5. Serve the vegetable patties with a side salad or bread.
