Ingredients:

- 2 slices of bread (e.g., ciabatta or rye bread)
- 1 avocado
- A handful of arugula
- 4 slices of bacon
- 2 eggs
- Salt and pepper to taste
- Olive oil for frying

Instructions:

1. Toast the bread slices until golden brown.
2. Heat olive oil in a pan and fry the bacon slices until crispy. Remove the bacon from the pan and drain excess fat.
3. Boil water in a pot and gently crack the eggs into the boiling water. Cook the eggs for about 3-4 minutes until the whites are set but the yolks are still runny.
4. Meanwhile, mash the avocado and season with salt and pepper.
5. Once the bread is toasted, spread the avocado mash on top of each slice.
