A refreshing and energizing salad perfect for embarking on a new phase of life, packed with colorful vegetables and nutrients to support well-being.

Ingredients:
- 2 dl quinoa
- 1 avocado
- 1 small cucumber
- 1 red bell pepper
- 1/2 red onion
- 1 dl cherry tomatoes
- 1 dl fresh parsley
- 3 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Cook the quinoa according to package instructions and let it cool.
2. Dice the avocado, cucumber, bell pepper, red onion, and cherry tomatoes into small pieces.
3. Chop the parsley finely.
4. In a large bowl, combine all the chopped ingredients.
5. Add the cooled quinoa to the salad.
6. Drizzle with olive oil and lemon juice, and season with salt and pepper.
7. Mix well and serve immediately.
