A refreshing and delicious salad that's perfect for busy days or a light meal. Preparation time is only 15 minutes, and this recipe makes 4 servings.Ingredients:
- 150 g mixed salad greens - 1 cucumber
- 250 g cherry tomatoes
- 1 red onion
- 100 g feta cheese
- 50 g olives (black or green)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the mixed salad greens under running water and drain well.2. Slice the cucumber into rounds and halve the cherry tomatoes.
3. Peel and slice the red onion into thin rings.
4. Crumble the feta cheese into small pieces.
5. Combine all ingredients in a large bowl.
6. Drizzle with olive oil and balsamic vinegar, and gently toss to combine.
7. Season with salt and pepper to taste.
8. Serve immediately or refrigerate if serving later.
