A delightful breakfast that adds a nice twist to your Sunday morning, perfect for enjoying a slow morning with family or friends. Preparation time is about 30 minutes and serves four.Ingredients:
- 4 slices whole grain bread
- 4 eggs
- 2 avocados
- 1 tomato
- 100 g fresh spinach leaves
- 50 g feta cheese
- Salt and pepper to taste
- 2 tbsp olive oil
- Lemon juice to taste
Instructions:
1. Lightly toast the whole grain bread slices.
2. Peel and slice the avocados. Squeeze a little lemon juice on them to prevent browning.
3. Cook the eggs to your liking (soft-boiled or hard-boiled).
4. Slice the tomato and crumble the feta cheese.
5. Once the bread is toasted, layer spinach leaves, avocado slices, tomato slices, and feta cheese on each slice.
6. Top with the cooked eggs, season with salt and pepper, and drizzle with olive oil.
