Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 3 potatoes, diced
- 4 dl vegetable broth
- 2 dl cream
- 1 dl fresh herbs (such as basil and parsley)
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a pot and sauté the onion and garlic until they are soft.
2. Add the diced potatoes and vegetable broth to the pot. Cook for about 15 minutes, until the potatoes are tender.
3. Puree the soup with an immersion blender or in a regular blender until smooth.
4. Stir in the cream and fresh herbs. Mix well and heat for a moment longer.
5. Season with salt and pepper before serving.
