A creamy Finnish fish soup inspired by the traditional markets of Turku. Perfect for a cozy meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g white fish (e.g., perch or cod)
- 2 potatoes
- 1 carrot
- 1 onion
- 2 garlic cloves
- 1 liter fish stock
- 200 ml heavy cream
- 100 ml fresh herbs (e.g., dill and parsley)
- Salt and pepper to taste
- 2 tablespoons butter
Instructions:
1. Peel and dice the potatoes and carrot into small cubes.
2. Peel and finely chop the onion and garlic.
3. In a pot, heat the butter and sauté the onion and garlic for a few minutes until soft.
4. Add the diced potatoes and carrot to the pot, stir, and cook for a few more minutes.
5. Pour in the fish stock and bring to a boil. Reduce the heat and let simmer for about 15 minutes until the vegetables are tender.
6. Add the fish pieces to the pot and cook for an additional 5-7 minutes until the fish is cooked through.
7. Stir in the heavy cream and season with salt, pepper, and fresh herbs.
8. Serve hot with fresh bread on the side.
