Serving Size: 4 servings
Ingredients:
- 2 eggplants
- 2 tomatoes
- 1 red onion
- 2 garlic cloves
- Juice of 1 lemon
- 4 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Wash the eggplants and slice them. Sprinkle salt on top and let them sit for about 30 minutes to draw out bitterness.
2. Rinse the eggplant slices and pat them dry with paper towels.
3. Grill the eggplants in olive oil until golden brown and tender. Allow to cool.
4. Peel and chop the red onion and garlic. Dice the tomatoes.
5. In a bowl, combine the cooled eggplants, tomatoes, red onion, and garlic.
6. Add lemon juice, olive oil, salt, and black pepper. Mix well.
7. Let the salad marinate in the refrigerator for about 30 minutes before serving.
8. Garnish with fresh parsley and serve.
