Asian-Inspired Eggplant Delight

Ingredients:
- 1 eggplant
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 3 tablespoons olive oil
- About 1 teaspoon chili powder
- 2-3 cloves of garlic
- 1 green chili (or red)
- 1.5 tablespoons olive oil (additional)
- 1 teaspoon sesame oil
- 1.5 tablespoons lime juice
- 1.5 teaspoons brown sugar
- Toasted sesame seeds
- Fresh mint and cilantro leaves
Instructions:
1. Wash and dry the eggplant, then slice it into ½-inch thick pieces lengthwise.
2. In a bowl, mix soy sauce, fish sauce, 3 tablespoons of olive oil, and chili powder. Brush the eggplant slices with the mixture on both sides.
3. Place the slices on a baking sheet lined with parchment paper and roast under a broiler at 225°C (437°F) until the eggplant is browned and tender.
4. Remove seeds from the chili and dice it. Dice the garlic cloves as well.
5. Heat 1.5 tablespoons of olive oil in a pan and sauté the chili and garlic for a few minutes until softened.
6. Remove the pan from heat and add sugar, lime juice, sesame oil, and any remaining marinade from the eggplant.
7. Arrange the roasted eggplant slices in a shallow dish and pour the sauce over them. Let them marinate for a few minutes.
8. Before serving, sprinkle toasted sesame seeds and fresh mint and cilantro on top.
