Ingredients
- Fresh vendace (caught the day before) - Salt
- White pepper
- Chopped dill
- All-purpose flour
- Black peppercorns (crushed)
- Butter for frying
Instructions
1. Clean the vendace and remove the backbone. 2. Rinse the fillets under cold water and pat them dry lightly.
3. Season the fish fillets with salt, white pepper, and chopped dill.
4. On a plate, mix the all-purpose flour with the crushed black pepper.
5. Dredge the fish fillets in the flour mixture, ensuring they are evenly coated.
6. Heat butter in a frying pan over medium heat.
7. Fry the fish fillets in the pan for about 3-4 minutes on each side until golden brown.
8. Transfer the fried vendace to a paper towel to drain excess fat.
9. Serve warm, accompanied by potatoes or a salad.
