A fresh and hearty dinner made with delicious vendace and flavorful horseradish mayonnaise.

Ingredients:

- 500 g cleaned vendace
- 2 dl mayonnaise
- 3 tbsp horseradish paste
- 2 tbsp lemon juice
- Pinch of flaky sea salt
- 1/2 tsp black pepper (coarsely ground)
- Dill and chives for garnish
For the Coating:
- 2 dl rye flour
- 2 tsp sea salt
- Grated lemon zest
- 1/2 tsp white pepper
For Frying:
- Butter
Additional Side:
- 1 large potato or 8 small ones
- Lettuce
- Dill and chives
- 1 red onion
- Lemon wedges

Instructions:

1. Thaw the vendace the day before and drain any excess liquid. Remove tails and backbone.
2. Prepare the horseradish mayonnaise by mixing mayonnaise, horseradish paste, lemon juice, sea salt, black pepper, dill, and chives. Let it sit in the refrigerator to develop flavors.
3. Combine the coating ingredients in a bowl. Dredge the vendace in the flour mixture.
4. Fry the coated vendace in butter until golden brown on both sides.
5. Prepare the salad: Tear the lettuce over the potato, slice the red onion into thin rings, and add the onion and herbs on top of the salad.
6. Place the hot vendace on top of the salad, drizzle with horseradish mayonnaise, and serve with lemon wedges.
