A delicious and colorful salad perfect for a festive picnic or summer gathering. This salad is packed with flavor and can be easily prepared in advance. Preparation Time: 30 minutes
Serving Size: 4-6 people
Ingredients:
- 200 g quinoa - 1 cucumber
- 2 cherry tomatoes
- 1 bell pepper (any color)
- 1 red onion
- 1 avocado
- 100 g feta cheese
- 1 dl fresh basil
- 1 dl olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Cook the quinoa according to package instructions and let it cool.2. Chop the cucumber, cherry tomatoes, bell pepper, red onion, and avocado into small pieces.
3. Crumble the feta cheese and chop the basil.
4. In a large bowl, combine the cooled quinoa, chopped vegetables, feta cheese, and basil.
5. In a separate bowl, mix the olive oil and balsamic vinegar, then pour it over the salad.
6. Season with salt and pepper and mix well.
7. Serve immediately or let it marinate in the refrigerator before serving.
