Ingredients:
- 300 g rice noodles- 200 g tofu (or chicken)
- 2 tablespoons oil
- 2 cloves garlic, minced
- 1 carrot, sliced
- 1 bell pepper, sliced
- 100 g snap peas
- 3 tablespoons soy sauce
- 2 tablespoons fish sauce (optional)
- 1 tablespoon tamarind paste
- 2 tablespoons crushed peanuts
- 2 green onions, chopped
- 1 lime, cut into wedges
Instructions:
1. Cook the rice noodles according to package instructions and drain.2. Heat the oil in a frying pan and add the minced garlic. Sauté until golden brown.
3. Add the tofu (or chicken) to the pan and cook until it is nicely colored.
4. Add the sliced carrots, bell peppers, and snap peas. Stir and cook for a few minutes.
5. Add the cooked noodles to the pan and mix well.
6. Pour in the soy sauce, fish sauce, and tamarind paste. Combine all ingredients thoroughly.
7. Serve the dish on plates and garnish with crushed peanuts and chopped green onions.
8. Enjoy with lime wedges on the side.
